Summer Fruit Crumble This recipe is quick & easy. It works very well with most combinations of summer fruits. Just make sure the fruit is soft & ripe.

Ingredients
4 cups of sliced peaches, apricots, plums,raspberries, blueberries (or any combination of these)
3 cups of whole dark cherries, pitted
1 cup (250gm) plus 1 tablespoon white flour
2 tablespoons of white granulated sugar
3 tablespoons of brown sugar
1/4 teaspoon salt
4 tablespoons of melted butter
Method
Preheat oven to 190° C (375°F)
Combine the fruit in a bowl. Toss with 1 tablespoon of flour and granulated sugar. Place in a medium sized baking dish.
Combine the brown sugar, 1 cup of flour, salt, melted butter. Mix well. Sprinkle the mixture over the pan of fruit. Pat mixture into place on top of the fruit.
Bake for half an hour or until the topping is golden brown and the fruit is bubbly. Let it cool for at least 20 minutes before serving it. It is possible to serve it warm or at room temperature. I like to serve it with ice cream.
Note: A simple method to pit the cherries is place them on a cutting board and press them with the flat side of a knife ...the pit pops out easily that way.
